i am ready for spring

can you tell i am ready for spring?  look at these little lovelies, shameless self promotion.  in Iowa,  spring can't come soon enough.  Iowa winters seem never ending, so when it reached 40 today on one of the late days of February, i am left optimistic that spring will be here shortly.

this is my go to snack lately.  it's great alone or with a hot bowl of soup.  my friend Maggie clued me in to this recipe that was in an issue of everyday food years ago. 

open face spinach and goat cheese quesadillas

• 1 tablespoon olive oil, plus more for coating baking sheet
• 3 cups flat-leaf spinach leaves, washed, and dried
• 4 (6-inch) flour tortillas (*I use wheat)
• 11 ounces fresh goat cheese, sliced 1/4 inch thick   (*I use goat cheese crumbles)
• Coarse salt and freshly ground pepper
• *I sprinkle on walnut pieces before it goes in the oven

1. Preheat oven to 400 degrees. Lightly brush a baking sheet with olive oil.
2. In a medium bowl, toss spinach with oil until well coated. Place the tortillas on prepared baking sheet. Top with spinach and goat cheese. Season with salt and pepper. Bake until cheese is golden brown and bubbling, about 10 minutes.

*i quarter it with a pizza cutter when it comes out and folding it in half also works well.

jewelry gals, i need your suggestions

i have these beautiful blue velvet flowers.  i would love to figure out a way to adhere them to a necklace.  i have thought of e-6000 and trying to wire them some how.  any suggestions????
